with us since at least the early 1600’s. As
with most of the antique French varieties the origin is somewhat obscure (a French gentleman or gentlewoman is always discreet …)
These apples are commonly used for holiday decoration but are an excellent snacking or culinary apple, used for cakes, breads or set in a ham or pork roast to bake slowly and absorb drippings.
