Murasaki Japanese Sweet Potatoes were first developed by the Louisiana State University’s Sweet Potato Research Station in Chase, Louisiana in the early 2000’s. They are medium to large in size with a dark purple to burgundy skin. Murasaki is the Japanese word for purple.
The inside flesh is white to pale yellow and is a bit drier than other sweet potato varieties. This simply means, they crisp really well! So they make some of the best sweet potato fries. Crispy on the outside and soft on the inside.
